Need a great way to use up those celery stalks that are no longer best to consume fresh? Perhaps you are not someone who enjoys fresh celery, but rather would like it combined into a soup where the taste is a bit fainter, but the nutrients are still there. No matter your reasoning or how high celery is on your list of preferred vegetables, this soup recipe is an easy way to provide the whole family with the umpteenth benefits of the plant.
Ingredients:
- 1 bunch of fresh celery stalk with leaves
- 1 medium yellow onion, peeled and chopped
- 1 clove of garlic, crushed
- 3 Tbs. unsalted butter
- ½ cup dry white wine
- 1-quart chicken stock
- 3 Tbs. crème Fraiche
- 2 tsp. fresh thyme leaves
- 1 tsp. of salt
- ½ tsp. pepper
After you have thoroughly washed the celery stalk, begin to cut it into half-inch dice.
Melt 3 Tbs. of butter in the bottom of a large pot.
Add in celery, onion, and garlic to the pot and sauté for a timed five minutes. Proceed to add 1 tsp. sea salt and ½ tsp. of pepper.
Add in wine and cook until wine reduces by half.
Add in chicken stock and bring mixture to a boil. Lower the heat, and allow simmering for 15 minutes.
After the fifteen minutes is up, remove the pot from heat, and puree mixture in a stick blender.
Pour pureed soup through a fine strainer and then pour back into the pot.
Stir in crème Fraiche through until you’ve reached a creamy consistency.
Ladle soup into bowls and sprinkle fresh thyme on top for garnish.
