Guacamole just got a whole new spin on it. Bean dip is so five years ago. Queso dip? No. Standard sour cream based dip? Nope. If you’re going to provide a spread for your football watchers, or if you just need a healthy snack alternative – you need to try our spicy avocado dip in endive boats. It’s got everything you need except the dippers. This time, we are taking the dippers to a newer and healthier level. Endive leaves. Think lettuce wrapped avocado dip – but better!
Ingredients:
- 2 large avocados, diced small and pitted
- ½ cup black beans, drained and rinsed
- 1/3 cup chopped cilantro
- 1 jalapeno, diced finely
- ½ red onion, diced finely
- 2 cloves of garlic
- 2 Tbs. red wine vinegar
- 2 Tbs. extra virgin olive oil
- ½ tsp. red pepper flakes
- Juice of 1 lime
- ½ tsp. salt
- 1 tsp. sugar
- ½ tsp. black pepper
- 3 heads of Endive, leaves separated
Place avocado, black beans, cilantro, jalapeno, and red onion into a medium sized bowl. Tumble ingredients all together gently. Set aside.
Mix all remaining ingredients except the Endive, into a jar. Shake the dressing well and pour over tumbled ingredients in previous bowl.
Mix all together and let sit for thirty minutes. Allow the avocado, beans, cilantro, jalapeno and onion to soak up the freshly made dressing before serving.
Fan out the separated Endive leaves and scoop the spicy dip into the Endive boat and ENJOY!
