Truth be told, we will eat just about anything that involves the word, “caramelized.” Just being honest here! The first time we tried out this recipe, we had a hard time wanting to experiment with further side dishes because This. Is. Just. So. Good.
As you know well by now, we speak carrots and onions quite fluently. So when we concocted this sweet combination of the two that creates the ULTIMATE easy side- dish for any given night of the week, we were quite pleased to share it with you.
So, on with it!
Things you’ll need:
- A pair of onion goggles – yep, they’re a real thing (not required, but a solid investment if you ask us)
- 2 medium-sized sweet white onions
- 5 medium-sized long carrots
- ¼ cup brown sugar
- 4 Tbs. butter
- Pinch of Kosher salt
Begin by prepping the vegetables separately.
Peel and trim the carrots. Slice carrots into thin rounds.
Peel outer layer of onion; cut onion into large dice, similar to the size of the carrot rounds.
Melt butter in a saucepan on medium-high heat. Be careful not to burn the butter! Keep it stirring and moving around with a spatula.
Once the butter is evenly distributed throughout the base of the pan, put in prepped carrots and onions. Add salt.
Allow veggies to baste in the butter and heat up for 5 minutes, then lower heat to medium-low.
Continue to sauté until carrots are soft and can be pierced with a fork; approximately 5 more minutes.
Sprinkle brown sugar over vegetables, slowly stirring and turning the contents around to be fully coated.
Bring down the heat to low, and allow vegetables to caramelize for another ten minutes.
At this point your kitchen will have such a sweet aroma – we wouldn’t blame you if you just ate the dish right then and there out of the pan!
