Oh boy, do we have a treat for you! One of the quickest and easiest recipes we know and love is sweet potato chips. It’s as easy as they sound – slicing medium-to-thin rounds of peeled sweet potatoes and roasting them. We like to add a little pizazz to our recipes, so we hope you enjoy our version of sweet potato chips with melted brie and thyme leaves!
Ingredients:
- 2 large sweet potatoes
- 1 wedge of brie cheese
- ¼ cup extra virgin olive oil
- 1 Tbs. dried thyme leaves
- 1 tsp. salt
- ½ tsp. black pepper
Preparation:
Preheat the oven to 375 degrees.
Peel and slice sweet potatoes into 1/8 inch rounds. You want them to be medium-to-thin because if you slice them too thin, they will crisp too much, too quickly. The rounds will automatically shrink when baked.
Lay out rounds out on baking sheet.
Drizzle olive oil over each round, turn each over individually and coat the other side with the olive oil.
Sprinkle each round with salt and pepper.
Place in the preheated oven for 20 minutes. Set a timer!
Remove tray from oven; place 1 tsp. of cold brie cheese on each round and a pinch of dried thyme.
Place back in the oven for 3 minutes.
Remove, plate on a platter and serve.
These are great for immediate consumption or for meal preparations for the week.
