Yes, as in French fries! Here comes your guilt-free side of fries. This side dish is so easy, and just about everyone, especially kids, hardly can tell a difference! If you’re anything like us, we are constantly looking for healthier alternatives to the not-so-healthy foods we don’t want to deprive ourselves of. These parsnip fries are the real deal, and if we do say so ourselves, French fries have met their match. Game point!
Ingredients
- 1-pound parsnips
- 1 Tbs. avocado oil
- 2 Tbs. fresh lemon juice
- ¼ cup chopped parsley
- 1 Tbs. fresh dill
- ½ Tsp. red chili flakes
- ½ Tsp. paprika
- salt
- pepper
Peel and slice parsnip into thin strips – not too thin to prevent burning, but not too thick to prevent them from being undercooked.
Preheat oven to 500 degrees.
In a medium-size bowl, combine parsnips, lemon juice, paprika, chili flakes, oil, salt, and pepper until the vegetable strips are fully coated.
Spread the strips on a prepped baking sheet and pop in the oven for 8 minutes.
Remove baking sheet and flip slices over. Sprinkle parsley and dill overtop fries until they are dusted.
Place baking sheet back in oven for 2-3 more minutes, watching carefully so they don’t burn. Add or negate time-based on your oven heat range.
When finished baking, you should have condensed, small French fries with lots of good flavors baked right in. Serve these babies with a side of ranch or ketchup and see if people tell the difference! (Trust us, there’s a REAL difference in the nutritional content!)
