Street tacos…but with a twist. If you have been following our virtual recipe book, you know by now we love lean ground turkey meat around here. Whenever we can incorporate it, we do. This week, we are getting down to business with a classic street taco without the extra fat. Many people underrate ground turkey meat because of lack of flavor – but if you learn to flavor it well, it just may become your new go to meat of choice. You’ll have to try this out and be the judge!
Ingredients:
- 8 oz. lean ground turkey breast
- – 1 tsp. ground cumin
- 1 clove garlic, crushed
- 1 tsp. chili powder
- 1 tsp. dried oregano
- 1 pack of corn tortillas
- ½ extra virgin olive oil
- 1 cup tomatoes, diced
- 1 sweet onion, chopped
- 1 cup fresh corn
- 1 cup torn iceberg lettuce
- ½ cup fresh cut cilantro
- 1 cup Cojita cheese
- ½ a jalapeno, remove half of the seeds
- 2 limes
It’s best to begin by getting all of your condiments washed, chopped and ready. Dice your tomatoes and put them in their own little bowl, put the corn in a little bowl, extra chopped onion in a bowl, lettuce in a bowl, cilantro, Cojita cheese, and the chopped jalapeno. Slice up both limes into ready-to-go wedges.
Begin by sautéing half a cup of onion and a clove of crushed garlic in a ¼ cup of olive oil in a medium saucepan. As the turkey cooks, begin to break it up with paddle until it is almost cooked through and fully brown. Then add in cumin, chili powder, and dried oregano. Continue to stir and chop turkey meat into small bite size pieces.
We recommend heating up your tortillas by putting them directly over a low burner. This will get them warm, crisp and browned. Do so carefully with tongs. Do as many corn tortillas as desired and set them aside in a covered bowl to keep warm.
When you are ready to serve, everything should be in place and ready to individually pile on to plates! Plate up a couple tortillas, add in some turkey meat out of the pan or bowl if you transferred it, and go from bowl to bowl to add any and all condiments.
Don’t forget that extra squeeze of lime at the end!
