We know a good peach when we see one, and we certainly know how to capitalize on the peak season of peaches to the fullest extent. An old family favorite recipe lies with grilled peaches. There’s not a lot of fruit that tastes incredible when grilled, but peaches happen to be one of them and we do not take that for granted. This recipe is the perfect light meal for spring and summer or an essential side dish everyone is sure to take to. Things are about to get real peachy…
Ingredients:
- 6 cups fresh arugula
- 3 peaches, quartered
- 2 oranges, peeled and cut into one-inch pieces
- ½ cup crumbled feta cheese
- ¼ cup white balsamic vinegar
- 1 Tbs. Dijon mustard
- 2 Tbs. honey
- 1 clove garlic, crushed
- 1/3 cup extra virgin olive oil+ 2 Tbs., divided
- ½ tsp. red chili flakes
- 1 tsp. orange zest
Begin by combining arugula, orange pieces, and feta cheese into a medium size salad bowl. Set bowl aside.
Prep your grill to get to medium heat. Brush quartered peach slices with the 2 Tbs. of olive oil. Cover the peaches over the grill, and grill until light brown, about 8 minutes. Be sure to occasionally turn the peaches so as not to burn them. They grill quickly with their fair flesh! Once grilled to your satisfaction, set aside grilled peach slices to cool.
Lastly, you will want to prep the salad dressing. Do so by combining the white balsamic vinegar, Dijon mustard, honey, crushed garlic, chili flakes, and orange zest and whisk until thoroughly combined.
Add grilled peach slices into the original salad bowl with other ingredients and immediately drizzle the salad dressing over top. Carefully fold the dressing into all ingredients and over the peaches and enjoy!
This can be served while the peaches are still warm, or fully cooled. Your choice!
