If you’re going to make beets – we suggest starting with a basic recipe such as this one. Beets make a fantastic side dish, and this dolled up recipe will give guests or family members a taste into the world of beets – the perfect introduction. This recipe utilizes warm, bite-sized sweet and savory elements into a combination you can’t beet!
Ingredients List:
- 5 medium-sized beets (approx. 2 cups)
- 3 Tbs. balsamic vinegar
- ¼ cup extra virgin olive oil
- 2 Tbs. honey
- 1 Tsp. Dijon mustard
- 1 clove crushed garlic
- 1/3 cup crumbled Gorgonzola cheese
- Fresh black pepper
Heat the oven to 350 degrees.
Begin by peeling and cubing beets into half-inch cubes. Using a vegetable steamer, steam the beets for 10-15 minutes until they can be pierced through with a knife.
While the beets steam, whisk together the remainder of the ingredients with the exception of the Gorgonzola and pepper.
Place warm cubed beets in a small baking dish.
Drizzle the glaze over top, and toss gently.
Sprinkle the Gorgonzola over the top of the glazed beets; grind the fresh black pepper on top to taste.
Place the baking dish into the oven for 5 minutes; just until cheese melts.
Remove from oven, and serve warm.
