Salmon is a prime dish to incorporate grapefruit! With the combination of fish, the right spices and herbs, the tidbit of sweet and fresh grapefruit to combat all the other flavors – you just might find yourself with a new favorite household meal. Read on to find out how we make this a staple around here!
Ingredients:
- 1 pound salmon filet
- 1 ½ tsp. paprika
- 1 tsp. onion powder
- 1 tsp. garlic powder
- ¼ tsp. salt
- ¼ tsp. thyme
- ¼ tsp. black pepper
- 1/8 tsp. cayenne pepper
- 2 tsp. brown sugar
- 2 tsp. extra virgin olive oil
- 2 cups grapefruit, roughly chopped, reserve extra juice (room temperature!)
- 1/3 cup diced mild white onion
- ¼ cup chopped cilantro
- 1 jalapeno, finely diced
- 2 tsp. sugar
Let’s get that salmon prepped and going! Preheat the oven to 375 degrees. Cut salmon into four separate filets and brush each one with the olive oil.
Next, we want to get out rub on the salmon so we need to combine the paprika, both onion and garlic powder, salt, thyme, black pepper, cayenne pepper, and brown sugar into a bowl and mix thoroughly. Once the oil has been spread on the filets, go ahead and start coating the filets entirely with the rub.
The salmon filets should be put on foil in one or two baking pans, depending on the size of your oven. Bake salmon for 20 minutes – the fish should flake off easily.
Now that our salmon is toasty and ready to go, let’s get that grapefruit chopped up, allowing the excess juice to collect to use in our glaze. Combine the grapefruit pieces, excess juice, sugar, diced jalapeno, cilantro, and white onion into a loose glazed salsa, and blend well.
Plate the salmon filets and spoon glazed grapefruit salsa overtop each individual piece. Serve right away!
