Oh, yes. We went there. We are all about the acorn squash life around here. The perfect winter squash side dish is a go-to for many people and we want to extend our beloved recipe for the best acorn squash out there! Enjoy!
Ingredients
- 1 acorn squash
- 2 Tbs. melted butter, divided
- 2 Tbs. brown sugar
- 1 Tbs. pure maple syrup
- ½ tsp. cinnamon
Begin by washing the acorn squash thoroughly. Dry and cut in half lengthwise to form two halves. Scrape out all seeds to prepare flesh for dressing.
Fill a baking dish with ½ inch room temperature water. Place two halves face down in the water.
Bake at 400 degrees for 30 minutes.
While squash is baking, take a small bowl and combine brown sugar, maple syrup and cinnamon together to form a mixture.
After 30 minutes, remove baking dish from oven.
Remove any excess water from the dish. Turn squash right side up and pierce the flesh with a fork to confirm softness. The fork should slide right in smoothly.
With squash facing right side up, brush 1 Tbs. melted butter over the inner flesh on both halves.
Drop the other Tbs. of melted butter at the bottom center of each half.
Divide and sprinkle sugar mixture evenly between the two squash over the melted butter.
Pop baking dish back in the oven for an additional 15 minutes.
Once they are finished baking, the tops should be slightly browned with melted butter and sugar mixture combined. If the flesh was not soft enough after the first round, add on baking time in 10-minute increments, while monitoring.
