It’s extremely healthy, low in calories, carbohydrates, and fat and has a high water percentile. Typically, we associate pesto with basil, which can be added into our cucumber pesto, but we tend to prefer it without. It all depends on your personal taste! You can indeed replace the called for avocado oil with olive oil, but if you have never used avocado oil as your main cooking oil, we suggest trying it out in this instance. This is a super quick recipe that can be made for a week’s meal prep, or right out of the blending process. Dip various vegetables, chips, crackers into your pesto, or use this as the sauce for any pasta dish.

Ingredients:
- 1 cup chopped cucumber
- ¼ cup avocado oil
- ½ cup pine nuts, soaked
- ¼ cup nutritional yeast
- 2 Tbs. fresh lemon juice
- 1 clove garlic, crushed
- Black pepper
- Salt
In a food processor, combine cucumber, pine nuts, and garlic. Slowly add in avocado oil, nutritional yeast, and lemon juice until you arrive at your desired consistency.
Add more avocado oil if mixture becomes too thick.
Once the mixture is thoroughly combined, take out and place in a small sauce bowl. Garnish with salt and pepper.
