If we are going to add kale to the menu – we want it to taste good. Everyone has their own way of making kale more palatable, and this just so happens to be ours. In case you didn’t catch on already from previous recipes, we love spice around here. With that spice, we love a good crisp bite. Let us present to you one of the healthiest snacks you’ve heard of in a while and we challenge you to try it out.
Ingredients:
- 1 bunch fresh kale
- 1 Tbs. coconut oil
- 1 lemon, and zest
- 1 tsp. chili flakes
- 1 tsp. paprika
- 1 tsp. garlic powder
Begin by preheating the oven to 350 degrees. Prep and line a baking sheet with foil.
Take your fresh bunch of kale and begin sourcing through it and isolating the leaves from the hard stems. You may need to cut some pieces, while others you can just pull apart. Try and keep the leaves a big as possible, as they will shrink radically once baked.
Spread out all the kale pieces across the baking sheet. Drizzle the coconut oil over the kale as evenly as possible. Distribution of the oil is important, as we don’t want any leaves oilier than the others, if possible.
Cut the lemon in half, and drizzle the juice all over the kale and coconut oil. Using the other half of the lemon, zest a good amount of the peel over kale bites.
Sprinkle chili flakes, paprika and garlic powder as evenly as you can and use your hands to gently rub oil and spices into the kale leaves for best flavoring.
Bake in the oven for 10-15 minutes, making sure the edges are light brown and crisp, but remove before they burn! Keep an eye on them until they are to the crisp level of your liking, and remove from oven.
Allow kale bites to cool. Once cooled, serve in a bowl with one last spritz of lemon juice and snack away!
