This oh so simple dessert recipe will have you counting down the days until nectarines hit their peak season in July. The sweet nectar coat glaze we create to go over a vanilla bean ice cream is light, airy and refreshing. The list of ingredients is small, but this palatable experience is huge.
Ingredients:
- 4 ripe nectarines
- ΒΌ cane sugar
- 2 Tbs. cornstarch
- 1 small tub of vanilla bean ice cream (your brand preference)
Begin by peeling and chopping two nectarines into medium sized chunks.
Place these into a small saucepan.
Add a half-cup of cold water and sugar to the saucepan and put over medium-low heat. Do this until the mixture starts to a simmer with bubbles.
Let simmer three minutes.
At this point, the nectarines will start to break down with the sugar and heat to form more of a glaze texture.
Turn heat to low.
Separately, mix cornstarch into 2 Tbs. of cold water and slowly stir into nectarines mixture until thickened.
Peel and slice the other two nectarines that are set aside and gently fold fresh slices into the warm mixture.
Let cool.
You should now have a nectarine glaze mixed in with fresh nectarine slices.
Spoon mixture over vanilla bean ice cream, spooning extra glaze over top to drip down sides.
All that is left now is to ENJOY!
