As we head into the summer months, it seems fitting to feature and serve a light vegetable pizza – nothing too heavy. Summer squash, specifically yellow squash, in this case, is perfect to be the main accent on this fresh and casual pizza. We have to take full advantage of the slight sweetness of the yellow squash while in season and enhance it – featured on this unique and delicious pizza.
Ingredients:
- 2 yellow squash, sliced
- 1 pre-baked pizza crust
- 1 cup mozzarella, shredded
- ½ Gruyere, shredded
- 2 cloves garlic, crushed
- ¼ green onion, sliced
- 6 fresh basil leaves, sliced into strips
- 3 Tbs. extra virgin olive oil
- salt
- pepper
Heat oven to 400 degrees.
Place pre-baked pizza crust on a cookie sheet or a pre-heated pizza stone. Sprinkle both mozzarella and Gruyere cheeses over the crust, covering as much of the crust as possible.
Spread crushed garlic over cheeses, evenly.
Layer the sliced squash over top, evenly across the whole pizza.
Sprinkle green onions and basil over the squash, topped with salt and pepper for flavor.
Brush the rim of pizza crust with olive oil and drizzle the rest over the pizza.
Bake for 20-25 minutes until cheese is bubbly and the squash is slightly toasted.
Allow pizza to cool for ten minutes before slicing with a pizza cutter. Serve up a slice or two on a plate with a drizzle of balsamic vinegar.
