– 1 can organic black beans, drained and rinsed
– 3 ears of fresh corn
– ¼ cup red onion, finely diced
– 1 lime, zest, and juice
– 2 Tbs. red wine vinegar
– 1 clove garlic, crushed
– 1 tsp. salt
– ¼ tsp. red chili flakes
– ¼ tsp. freshly ground black pepper
– 1 Tbs. sugar
– 2 Tbs. extra virgin olive oil
– ¼ cup freshly and roughly chopped cilantro
Drain and rinse one can of organic black beans. Place in a medium-size bowl.
Blanch corn kernels in boiling water for three minutes and drain. Add corn into the bowl with beans.
Dice in finely chopped red onion and fold into beans and corn. Add lime zest to the bowl.
In a separate small bowl, combine the juice of a lime, red wine vinegar, garlic, salt, chili flakes, sugar, and black pepper. Whisk in olive oil.
Pour dressing from small bowl over the original medium bowl of beans, corn, and onion. Fold dressing into all ingredients to marinate. Sprinkle cilantro on top, and an extra sprig of lime juice.
Let the salsa sit for thirty minutes to allow flavors to combine.
