The recipe ideas for blueberries are endless. We’re talking about a berry that is perfectly tasty and nutritious whether eaten plain, frozen or just as a topper on oatmeal or cereal. You just can’t go wrong! If we had to choose a favorite dish to incorporate blueberries into your diet, we have to go with our love for blueberry crumble dishes. These buttery crumble squares with a hint of lavender are the best meal prep idea for a week’s worth of dessert for you and the family – or just you, this is a no judgment zone.
If you’ve ever had raspberry crumble bars, you probably can already taste these gooey blueberry ones! A little lemon, a bit of lavender – and a whole lot of crumble, please!
Grab these items and have them ready:
- 2 cups fresh blueberries
- 2 teaspoons cornstarch
- 1 tablespoon of fresh squeezed lemon juice
- 2 teaspoons dried lavender blossoms
- ¼ cup granulated sugar
- 1 cup flour
- ½ dried oats
- ½ superfine sugar (for topping)
- ½ teaspoon baking powder
- 1 and ½ sticks of butter (cut into small dice)
- 1 egg yolk
- 1 tablespoon brown sugar
- 1 tablespoon superfine sugar (for bottom layer)
Cooking Instructions:
- Begin by preheating the oven to 375 degrees.
- Butter an 8×8 inch pan, liberally.
- In a mixing bowl, combine these ingredients: blueberries, cornstarch, dried lavender, lemon juice, and ¼ cup granulated sugar). Set aside.
- In a separate mixing bowl, combine flour, ½ cup superfine sugar, baking powder, and dried oats.
- Using this same bowl, put in the dices of butter as well as the egg yolk using a fork until the mixture is fine but crumbly.
- Remove three-quarters of the mixture and spread into the bottom of the buttered pan.
- Take first mixing bowl containing the blueberry mixture and pour this over the bottom layer.
- Go back to the remaining ¼ topping mixture and add the brown sugar and 1 tablespoon of the superfine sugar.
- Crumble this topping in clean hands and sprinkle it over top of the blueberry mixture.
- Bake for 40 minutes. Check and be sure the blueberries are bubbling and the topping is not burned, but turning color. Add on one-minute increments of cooking time until the dish is done.
- After removing the dish from the oven, allow to sit until at room temperature.
- Use a metal spatula and cut dish into sizeable squares based on preferable portion control.
The great thing about this recipe is that you don’t have to worry about these going bad during the week. They are the perfect snack or dessert when you need something sweet, and portion control is super easy. Add one to the kids’ lunch in a plastic baggie, eat one on a paper towel on the way to work, or binge your favorite late night show munching on a square and a cup of chamomile tea with lavender honey for good measure. 🙂
